October: Lamb Stew and Pasta

Serves 4

Estimated time for preparation and cooking: 1 hour

This fragrant pasta dish has a Somali flare, and was created by one of the young men who accesses our Brent youth club in the summer of 2022. Whilst he used pasta, he finds that any carb goes well with the traditional lamb curry.

Ingredients

  • 3 cloves garlic  

  • 1 onion 

  • 4 medium tomatoes 

  • 3 medium potatoes 

  • 2 medium carrots 

  • 1 red pepper 

  • Sunflower oil 

  • 600g lamb (or soya chunks for a meat-free alternative) 

  • 1 tbsp tomato purée 

  • 1 tsp curry powder 

  • 1 Maggi stock cube 

  • Fresh coriander  (optional)

  • Salt 

  • 400g pasta (or another carb of choice)

Recipe

1) Preparing your ingredients 

a) Mince garlic. 

b) Peel the onion - dice 4/5, and slice 1/5. 

c) Peel the tomatoes. 

d) Peel the potatoes and cut into large cubes. 

e) Peel and slice the carrots. 

f) Slice the red pepper. 

g) Dice the lamb. 

2) Cooking ingredients

a) Heat oil in a large saucepan. 

b) Add diced onions and cook until translucent. 

c) Add the lamb and cook until the outside is browned  – about 5-10 minutes. 

d) Blitz the tomatoes in a mixer until it looks like a puree.

e) Add water so that meat is covered.

f) Add in the tomato purée, carrots, potatoes, curry powder, and the Maggi cube. Mix a little, as overmixing will keep the liquid from evaporating.

g) Simmer with the lid on until the meat, carrots and potatoes are cooked through – about 20 minutes. 

h) Blitz your minced garlic with coriander and some water to create a runny consistency, and pour into the saucepan. 

i) Add salt to taste. 

j) Add the red pepper and sliced onion to lamb mix, and leave for another 10 minutes of cooking. 

4) Serve up

a) Drain pasta and add to a bowl.

b) Add lamb curry and potatoes on top.

c) Garnish with coriander (optional).

3) Cooking pasta

Boil pasta according to instructions whilst waiting for the lamb to finish cooking.
